Whole Miso Roasted Cauliflower

We are always championing using up those (still in date) cupboard ingredients. This dish is so easy, and the cauliflower is the star but the glaze is also amazing!!!

INGREDIENTS

  • 1 medium cauliflower
  • 3 TBSP miso paste (or peanut butter works!)
  • 2 tsp grated ginger
  • 2 tsp grated ginger
  • 2 tsp grated ginger
  • 2 tsp grated garlic
  • 1/4 cup sherry (optional if you have some left from Christmas 😉)
  • 2 TBSP maple syrup

METHOD

  1. Trim leaves and cut stalk of cauliflower so it is flat. Then cut a cross on stalk base and place on oven tray on its base.
  2. Cover in mixed marinade and cover in foil loosely.
  3. Bake in preheated oven at 200 degree celsius for 30 minutes, remove foil and roast for a further 30 minutes or until soft to cut through. Slice and serve with whatever you fancy!
